Ingredients:

  • 1 12 cups all-purpose flour
  • 3 bananas, finely crushed
  • 1 cup granulated sugar
  • ½ cup butter, softened
  • 2 eggs, beaten
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 12 teaspoon vanilla (optional)

Directions:

  1. In a mixing bowl, mix together the butter and sugar.
  2. Then mash the ripe bananas with a fork until completely smooth.
  3. Add the crushed bananas and eggs to the butter/sugar mixture and combine well.
  4. Sift together the flour, baking soda and salt then add to the creamed mixture.
  5. Add in the vanilla essence and mix just until combined. Be keen not over-mix.
  6. Transfer the mixture into a greased and floured loaf pan.
  7. Bake in a preheated oven at 180ºC for 55 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and allow to cool in the pan for a few minutes the transfer to a cooling rack to cool completely.
  9. Serve and enjoy.
