Dynamite Chicken is a mouth-watering dish that is made out of batter fried crispy chunks often served on a bed of spicy and tangy mayo sauce that gives an explosion of flavors hence its name ‘dynamite chicken.’ This dish makes for quite an unforgettable starter/snack/party treat.

3 chicken breasts, cubed
Vegetable oil for frying

For the batter:

6 tbspn cornflour
6 tbspn plain flour
81/2tbspn cold water
1 egg
1/2 tsp salt
1/2 tsp pepper
1/4 tsp chilli powder

For the spicy coating:

9 tbspn cornflour
9 tbspn plain flour
1 tsp chilli powder
1.5 tsp onion powder
1.5 tsp garlic powder
1/4 tsp paprika powder
1 tsp salt
1 tsp pepper

For the sauce:

8 tbspn mayonnaise
3 tbspn tomato ketchup
1 tsp rice vinegar/lemon juice
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika powder
1 tsp sesame oil
1 tsp honey
4 tbsp siracha sauce/chilli sauce (to taste)

  1. Mix together all ingredients for batter and set aside.

2.Mix ingredients for spicy coating and set aside also.

  1. Using tongs, take the chicken and dip in to the batter, followed by the spicy coating and set aside on a clean plate.
  2. Heat oil to 190° and fry the chicken in two batches for a few minutes till crispy and golden.

5.Drain on a plate lined with kitchen towel.

  1. Meanwhile thoroughly mix up the ingredients for the sauce.
  2. Take the sauce and mix it through the cooked chicken, taking care to ensure each piece is fully coated.

8.Ideally wait about 10 mins before serving to allow the sauce to soak in to the batter for a deliciously soft and crisp texture.

9.Serve with shredded lettuce.

Note: You can use shrimps in the place of chicken pieces to make dynamite shrimp. You can also add hot sauce to the dressing ingredients to fit your taste.
