These simple four-ingredient peanut butter coconut cookies are very easy to make and only take up a few minutes to get ready. Needing only, creamy peanut butter, eggs, sugar and shredded coconut, these cookies make for a healthy snack option and tea accompaniment.

Since flour is not included in the ingredients, it means the cookies are also gluten-free!

Peanut Butter Coconut Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • 1 large egg, at room temperature, beaten
  • 1 cup sugar
  • 1/2 cup sweetened shredded coconut

Directions:

  1. In a large bowl, mix all the ingredients, the creamy peanut butter, egg, sugar and shredded coconut.
  2. Scoop level table-spoonfuls of the cookie batter and roll into balls.
  3. Place on ungreased baking sheets and flatten with a fork.
  4. Bake in a preheated oven at 350° F for about 15 minutes or until set
  5. Remove from oven and allow to cool to wire racks.
  6. Serve and enjoy.
