For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup cold sour cream
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 1/2 teaspoon salt

For the filling:

  • 2cupsGranny Smith apples peeled and cut into small cubes
  • 1/4cupsugar
  • 1/2teaspooncinnamon
  • 2teaspoonsfresh lemon juice
  • 8store-bought soft caramels, roughly chopped
  • 2teaspoonsall-purpose flour

For the finishing:

  • Egg wash (1 egg lightly whisked with 1 Tablespoon water)
  • Crystal sanding sugar (optional)
  • Large flake sea salt

Making the dough:

  1. In a large bowl, mix together the flour, salt and baking powder.
  2. Add the butter into the flour mixture and mix using your fingers until the mixture is the consistency of wet sand.
  3. Add in the sour cream and mix well.
  4. Transfer the dough onto a well-floured work surface and knead the dough a few times until it comes together, adding more flour gradually.
  5. Roll the dough into an 8×10-inch rectangle and dust both sides with flour before folding it into thirds like you fold a letter.
  6. Rotate the dough 90º and roll it out again into an 8×10-inch rectangle.
  7. Fold the dough again into thirds then wrap it securely in plastic wrap and refrigerate it for at least half an hour.

Making the filling:

In a small bowl, combine the apples, lemon juice, cinnamon, sugar and flour, stirring until thoroughly mixed. Then set aside.

Making the pies:

  1. Remove the dough from the fridge and unfold it onto a well-floured surface, rolling it out to a 14×14-inch square.
  2. Cut out as many circles as you can from the squared dough using a 3-inch circular cookie cutter.
  3. Re-roll the scraps and continue cutting out circles until you run out of dough, ensuring you end up with an even number of circles.
  4. Place six of the dough circles on a parchment paper-lined cookie sheet.
  5. Scoop a small portion of the apple filling into the center of each circle, leaving enough of a border around the filling.
  6. Top the apple filling with a portion of the chopped caramels and a little bit of sea salt.
  7. Place a second dough circle on top of each filled circle then use a fork to crimp the edges together and seal each pie.
  8. Brush each pie with the egg wash, and using a sharp knife, cut two or three vents on the top of each pie.
  9. Sprinkle the pies with crystal sanding sugar if you desire to.
  10. Place in a preheated oven and bake the pies at 425ºF for about 15 minutes or until they’re golden brown
  11. Remove the pies from the oven and allow them to cool for 10 minutes then serve and enjoy.
  12. Repeat the filling and baking process with the remaining dough circles.

Note: Cut the apples into small bite-size pieces so you can be able to fit more into each hand pie.
