Ingredients:

  • 1 3/4 cups (245 grams) all-purpose flour
  • 2 cups (400 grams) granulated white sugar
  • 3/4 cup (75 grams) unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup (250 ml) warm water
  • 1 cup (250 ml) milk
  • 1/2 cup (120 ml) corn/vegetable oil

Directions:

  1. In a mixing bowl, start by cracking the eggs
  2. Add in the milk, oil and warm water then mix everything together with a whisk.
  3. In a separate bowl, add in the cocoa, flour, baking soda(bicarbonate of soda) and the baking powder. Then sieve the mixed dry ingredients into a large mixing bowl. This is important as it eliminates the small lumps in cocoa and the flour.
  4. Add the sugar and mix well.
  5. Gradually add the wet ingredients into the dry ingredients and mix. As it starts to thicken, make sure you get to the bottom of the bowl to get all the flour mixture.
  6. Stop mixing when all the dry ingredients are not visible and the mixture is smooth and pour the mixture into a lined baking tin.
  7. Place in a preheated oven and bake at 180ºC for 30-35 minutes. Baking time is dependent on the size of the baking tin you use. Cake is baked when a tooth pick comes out clean when inserted at the center of the cake.
  8. Allow to cool on a cooling rack before removing from the baking tin. Enjoy.
